History

In 1762, together with the agronomist Antonio Zanon and Count Fabio Asquini, Count Ludovico Ottelio founded the Società d’agricoltura pratica (Practical Agriculture Society) in Udine, which was annexed to the Academy of the Friulian capital and identified the Picolit Friulano as an excellent meditative wine.

Sinking its roots in the past while concentrating on the development of indigenous vines, the Tacconi-Ottelio family therefore aimed to enhance the prestige of Ciliegiolo and Grechetto in San Gemini in Umbria. The ciliegiolo represents a great strong point for the Cantina Vallantica Taccoi-Ottelio, thanks especially to its versatility, which allows it to be vinified as white, rosé, red, sparkling or passito wine. The facilities of the Cantina Vallantica date back to the 1950s. It was one of the first wineries in Umbria to be built with a modern design, and it has recently been renovated and adapted to new quality standards to ensure perfect winemaking practices.

TRADITIONAL PROCESSING

In processing the grapes in the traditional manner - through manual harvesting in boxes, punching down by hand during the fermentation and the use of minimal amounts of sulphites - the Vallantica Tacconi-Ottelio company respects their qualitative features to the full. As can be seen from their names, the wines produced in Vallantica are rooted in the local area and its well-known characteristics.

THE MODERN WINERY

The facilities of the Cantina Vallantica date back to the 1950s. It is one of the first wineries in Umbria built with modern design, and it has recently been renovated and adapted to new quality standards to ensure perfect winemaking practices. High quality wines are created in the new Cantina Vallantica, thanks in part to the fact that the wine is preserved with nitrogen saturation, by means of a sophisticated home automation system that can control the temperature. This helps to preserve the richness of the fruit's aromas during the fermentation of white and red wines.

Most of the wine vessels here were made on site in precast concrete and then restructured to make them suitable for winemaking. This process allows for better maintenance of the product compared to common stainless steel wine vessels, thanks to the reduced heat exchange. It also blocks electromagnetic pollution, preventing the wine from refermenting. The Cantina Vallantica is completed by stainless steel fermenters and a small barrel cellar, with oak tonneaux and barriques by the most prestigious brands such as Boutes, Mercury and Taransaud, which are used for refining the red wines.
