WINE CELLAR
The wine cellar Vallantica Tacconi-Ottelio, is one of the gems in the Umbrian world of wine, collected in recent years, years which have been important for the resurgence in wine production.
A little winery, but great in its sensibility of qualitative production tied to the territory. This applies also to the wines, the origin of their names lies in our territory and the peculiarity traceable to the same.
Equipped with advanced technology, but at the same time respectful of tradition, with the aim to transform in the best possible way the quality of fruit into top wine quality.
The winery Vallantica Tacconi-Ottelio works the grapes in traditional way, respects the quality features through manual collection in chests, manual milling during the fermentation and using sulfites in amounts not to exceed the 30/40 g / hl. The structure was built in the late 50's, note that it can be considered one of the first wineries in Umbria with a modern concept. Only few years ago it was renovated and adapted to new quality standards,required for a good wine-making procedure, aiming to obtain top quality wines thanks to the conservation of wine with nitrogen saturation, as well as to a sophisticated automation system, that enables during the fermentation of white and red wines a temperature control for better preserving the rich variety of the present aromas and scents of fruit. Another curiosity worth of note is that some of the wine vats have been realized on site in precast concrete and subsequently refurbished to make them suitable to be used for wine making. In fact they allow a better maintenance of the product and some wine makers are reassessing them because they are able to prevent the crossing of electromagnetic waves.Upon completion the cellar there are fermentation tanks in stainless steel and small barrels for aging red wines.
